Cook of the Week - Joey Burke

This week’s Cook of the Week is Joey Burke, husband of Terri Burke. Together, they share three children, Bailey, Hayden, and Banks Burke. When not attending family functions, Joey enjoys spending his time hunting. Here are three recipes he would like to share. Enjoy!

Venison Kabobs

•1 lb. venison tenderloin tips

•1/4 c. olive oil

•1/4 c. Worcestershire sauce

•1 tsp. minced garlic

•1 Tbsp. Dijon mustard

•1 Tbsp. brown sugar

•1/2 tsp. black pepper

•1/2 Tbsp. lemon juice

•8 oz. whole mushrooms

•32 oz. bag mini sweet peppers

Combine olive oil, Worcestershire, minced garlic, Dijon mustard, brown sugar, pepper, and lemon juice in a bowl in a bowl and whisk together. Add tenderloin tips to marinade and let marinate in the refrigerator for 30-60 minutes. Preheat grill to medium heat or 350°F. After marinating time, remove tenderloin tips and place them on their own skewer, separate from veggies. Add sweet peppers and whole mushrooms to skewers. Grill tenderloin tips until they reach medium-rare. Remove from grill. Grill veggies until soft and tender. Remove from grill and serve immediately. Serve with your favorite steak dipping sauce.

Venison Tater Tot Casserole

•1-2 lbs. ground Venison

•1.5 lbs. small onion, chopped


•1 12 oz. can cream of mushroom soup


•2 c. shredded cheddar cheese


•4 oz. sour cream


•Salt to taste

•pepper to taste


•Tater tots, unfrozen and uncooked

Sauté diced onion with ground venison and drain meat. Mix venison and onions with cream of mushroom soup, cheese, sour cream and desired salt-pepper. Mix these ingredients well, then layer in casserole dish, Layering the tater tots on top. Bake at 375°F for 35-40 minutes or until tater tots are crispy.

Oven-Baked Venison Burgers

•2 lbs. ground venison

•1 egg

•1/3 c. Italian breadcrumbs

•1 Tbsp. garlic powder

•1 Tbsp. onion powder

•1/2 tsp. salt

•1/2 tsp. black pepper

•1 Tbsp. canola oil

•Burger essentials: buns, lettuce, tomato, ketchup, mayo, cheese, etc.

Preheat oven to 375°F. Spray baking sheet with non-stick spray.

 Combine all burger ingredients in a large bowl and mix together with hands or a fork until all ingredients are combined. 
Form burger patties, flattening in center so they cook evenly. Place three burgers on a pan and cook over medium-high heat for 5 minutes on each side, or until burgers are nicely browned. Remove from pan and place burgers prepared baking sheet, and transfer to oven. Bake for about 10 minutes or until burgers are cooked to your liking. Remove from oven and let rest for five minutes before eating. Assemble your burger and enjoy!
