Lane Renfroe & Jody Underwood

Our Cooks of the Week are Lane Renfroe and Jody Underwood. They have been busy preparing for their upcoming wedding Saturday, Dec. 1, 4:30 p.m., at Emanuel Christian Ministries near Twin City. In their spare time they enjoy restoring antique furniture, traveling, cooking new recipes, and spending time with their family and friends. Lane is the daughter of Linda and the late Dale Renfroe and is a pharmacist at RiteAid in Metter. Jody is the son of Diane and Joe Underwood and is employed by Durden Bank in Swainsboro. They will make their home near Twin City.

From the Kitchen of Lane & Jody:

Creamy Crab Stew Recipe

2 tablespoons butter

1 small onion, chopped

1 (10 3/4 oz.) can condensed cream of potato soup

1 (10 3/4 oz.) can condensed clam chowder soup

1 soup can full of milk

1 soup can full of half and half

10 ounces real crab meat

In a large saucepan, melt the butter and sauté the onion until translucent, 3-4 minutes. Add the soups, milk and half and half.Add the crabmeat and bring just to a boil. Salt and pepper to taste. Serve immediately.

Cheese Biscuit Recipe

2 cups all-purpose flour, sift before measuring

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon dry mustard

3 tablespoons butter

2/3 cup shredded sharp cheddar cheese

2 tablespoons chopped fresh parsley

3/4 cup skim milk

Sift together flour, baking powder, salt, and dry mustard; cut in butter. Stir in shredded cheese, 2 tablespoons chopped parsley, and milk. Mix together lightly with a fork, just until moistened. Turn dough out onto a floured surface and knead gently a few times, until smooth. Roll out about 3/4-inch thick and place on a greased and floured baking sheet. Brush tops with milk; bake at 425° 20 to 25 minutes, until lightly browned. Makes 1 dozen cheese biscuits.

Christmas Coffee Punch Recipe

1 1/4 cup sugar

1 gallon strong coffee

1 pint whipping cream whipped

1 pint vanilla ice cream softened

1 pint chocolate ice cream softened

1 can chocolate syrup

Stir sugar into hot coffee. Chill thoroughly. Fold in whipped cream, chocolate syrup, and ice cream just before serving.
